Remember the sandy peanut butter cookies of your childhood, with the criss cross fork marks?  These are NOT those cookies.  And honestly, you’ll be surprised that peanuts could even taste this good.

  

 

Roasted Salted Peanut Butter Cookies

Yields Approximately 36 Cookies

8 oz unsalted butter (2 sticks) 
1 cup brown sugar 
1 cup granulated sugar 
1 1/4 cups all natural, chunky style peanut butter 
1/2 tsp baking powder 
1/2 tsp baking soda 
1/2 tsp salt 
2 large eggs 
1 1/4 cups dry roasted, salted peanuts

Preheat oven to 350 degrees 
Cream butter, both sugars, peanut butter, baking powder, baking soda and salt.


Add eggs, one at a time, beating well after each addition.
Stir in flour and peanuts and mix thoroughly. 


Drop 2 tbls batter onto parchment lined cookie sheet, and bake for approximately 14 minutes.
