Spicy black beans and good for you barley make this tasty vegan burger one you'll come back to again and again.

 

 

Black Bean and Barley Burgers Recipe

1 15 oz can black beans, drained and rinsed
1/2 cup cooked barley
1 tsp ancho chili powder
2 scallions, white part only, thinly sliced
salt & pepper to taste
3 Tbls olive oil

In a food processor or blender, process half of  the black beans till they form a thick paste.

Put the beans in a bowl and add the remaining ingredients, including the whole black beans.

Form into 4 patties

Heat the oil in a non stick skillet. Add the patties and cook till brown and a little crispy about 4 minutes. Flip and cook the other side 2-3 minutes. 

Garnish with guacamole, diced red onion and shitaki bacon.
