A fresh, colorful chicken dinner complete with your own homemade peanut sauce in under 15 minutes! It doesn’t get much better than this.

 

Chicken Lettuce Wraps

1 Chicken Breast
2 tbls peanut oil
1/4 tsp cinnamon
1/4 tsp ancho chili powder
1/2 Lemon, zested
1 small clove of garlic, finely chopped
1/2 tsp Salt

4 Large Leaves of Boston Lettuce
1 Scallion, thinly sliced

Cut the chicken breast into 1/4 inch slices. In a bowl, mix the cinnamon, ancho chili powder, garlic and lemon zest. Add the chicken and mix well, coating all the chicken with the rub.
Heat the peanut oil in a 10 inch skillet. When hot, add the chicken. Cook about 2 minutes, then turn each piece and cook the other side.
Place the lettuce leaves on a plate, top with the chicken and the peanut sauce. Garnish with the scallions.

 

For the Peanut Sauce
    
1 1-inch piece ginger, peeled
1 small garlic clove
1/2 cup creamy peanut butter
2 tablespoons reduced-sodium soy sauce
1 tbsp fresh lime juice
1 tsp (packed) light brown sugar
1/4-1/2 teaspoon crushed red pepper flakes

Put all ingredients into a small chopper or blender and puree until smooth.
