Ingredients
  

Cookie Cups
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Cream Pie Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping or freshly whipped cream
Apple Pie Filling
  • 2 medium apples, peeled, cored, and finely diced
  • 2 tablespoons unsalted butter
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin pan
  2. Beat the softened butter, granulated sugar, and brown sugar until creamy. Mix in the egg and vanilla
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually mix the dry ingredients into the butter mixture until a soft dough forms.
  4. Divide the dough between the muffin cups. Press each portion into the bottom and slightly up the sides, leaving a shallow well in the center
  5. Bake for 10 to 13 minutes, until the edges are lightly golden and the centers are set. If the centers puff up, gently press them down while warm.
  6. Cool the cookie cups in the pan for several minutes, then transfer them to a cooling rack and let them cool completely.
  7. For the apple filling, melt the butter in a saucepan over medium heat. Add the apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until the apples are tender but still hold their shape
  8. Mix the cornstarch and water in a small bowl. Stir into the apples and cook for another 1 to 2 minutes, until the mixture thickens. Cool completely.
  9. Beat the cream cheese and powdered sugar until smooth. Add the vanilla, then gently fold in the whipped topping or whipped cream.
  10. Spoon the cream filling into the cooled cookie cups
  11. Top each cup with the cooled apple pie filling.
  12. Refrigerate for at least 30 minutes before serving. Add caramel sauce, whipped cream, nuts, or cinnamon if desired.
