Banana Split Smores Ice Cream Cake

Ingredients
  

Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1.5 quarts banana ice cream, slightly softened
  • 1 cup sliced fresh strawberries
  • 1 large banana, thinly sliced
  • 1 cup mini marshmallows
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup chocolate sauce
  • 1/2 cup marshmallow topping or marshmallow creme
Topping
  • 1 1/2 cups whipped cream
  • 1/3 cup crushed graham crackers
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped peanuts or walnuts, optional
  • Maraschino cherries, optional
  • Extra chocolate sauce, for drizzling
  • Extra marshmallow topping, for drizzling

Method
 

  1. Line the bottom of a 9-inch springform pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press firmly into the bottom of the pan and freeze for 15 minutes.
  3. Let the banana ice cream soften until it is easy to spread but not melted
  4. Spread half of the softened ice cream evenly over the chilled crust.
  5. Add the sliced bananas and strawberries in an even layer
  6. Sprinkle with mini marshmallows and chocolate chips. Drizzle with chocolate sauce and small spoonfuls of marshmallow topping
  7. Spread the remaining banana ice cream over the filling and smooth the surface
  8. Cover tightly and freeze for at least 6 hours, preferably overnight.
  9. Remove the cake from the freezer and carefully release the springform pan.
  10. Top with whipped cream, crushed graham crackers, chocolate chips, nuts, chocolate sauce, marshmallow topping, and cherries
  11. Let the cake rest for 5 to 10 minutes before slicing
  12. For clean slices, use a sharp knife warmed under hot water and dried thoroughly before cutting
