Ingredients
  

  • 1 cup inely shredded zucchini
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips
No-Churn Ice Cream
  • 2 cups cold heavy whipping cream
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon teaspoon salt
  • 1 cup chopped chocolate zucchini bread
  • 1/2 cup semisweet chocolate chips

Method
 

  1. Preheat the oven to 350°F and lightly grease a standard loaf pan
  2. Finely shred the zucchini. If it is very watery, gently squeeze out some excess moisture
  3. Whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon
  4. In a separate bowl, whisk the egg, sugar, oil, and vanilla. Stir in the shredded zucchini
  5. Add the dry ingredients to the wet ingredients and mix just until combined. Fold in the chocolate chips
  6. Transfer the batter to the prepared loaf pan and bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs
  7. Cool the bread completely before cutting it into small pieces
  8. Beat the cold heavy cream with an electric mixer until stiff peaks form
  9. In a separate bowl, stir together the sweetened condensed milk, vanilla, and salt.
  10. Gently fold the condensed milk mixture into the whipped cream.
  11. Fold in the chopped chocolate zucchini bread and chocolate chips.
  12. Transfer the mixture to a parchment-lined loaf pan or freezer-safe container. Add extra bread pieces and chocolate chips between layers if desired
  13. Cover tightly and freeze for at least 6 hours, preferably overnight
  14. Let the ice cream sit at room temperature for 5 to 10 minutes before scooping.
