Ingredients
  

Cookie Dough Layer
  • 1 cup all-purpose flour, heat-treated and cooled
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 cup Circus Animal Cookies, roughly chopped
  • 1/4 cup rainbow sprinkles
White Chocolate Truffle Topping
  • 1/2 cups white chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup Circus Animal Cookies, crushed or roughly chopped
  • 2 tablespoons rainbow sprinkles

Method
 

  1. Line an 8 x 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  2. Heat-treat the flour to 165°F (74°C), then allow it to cool completely.
  3. Beat the softened butter, granulated sugar, and brown sugar until smooth and creamy.
  4. Mix in the milk and vanilla extract.
  5. Add the cooled flour and salt, mixing until a soft cookie dough forms.
  6. Fold in the chopped Circus Animal Cookies and rainbow sprinkles.
  7. Press the cookie dough evenly into the prepared pan.
  8. Refrigerate until the cookie dough layer is firm.
  9. Melt the white chocolate chips with the heavy cream in short microwave intervals, stirring between each interval.
  10. Stir in the vanilla extract until smooth.
  11. Pour the white chocolate mixture over the chilled cookie dough and spread evenly.
  12. Sprinkle the crushed Circus Animal Cookies and remaining sprinkles over the top
  13. Refrigerate until the white chocolate layer is completely firm.
  14. Lift the dessert from the pan using the parchment paper and cut into 16 bars.

Notes

  • Always heat-treat the flour before using it in this no-bake cookie dough.
  • Let the heat-treated flour cool completely before adding it to the butter mixture.
  • Do not overheat the white chocolate.
  • Chill the cookie dough layer before adding the topping for cleaner layers.
  • For neat slices, use a sharp knife warmed under hot water and dried thoroughly.
