Ingredients
  

  • 2 cups 2 finely crushed vanilla wafer or shortbread cookies
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
For the Banana Dulce De Leche Mousse
  • 1 cup 1 cup dulce de leche
  • 8 ounces cream cheese, softened
  • 1 teaspoon pure vanilla extract
  • 1 cup cold heavy whipping cream
  • 1/2 cup cup powdered sugar
  • 3 medium ripe bananas, thinly sliced
For the Topping
  • 1 cup cold heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/3 cup cup dulce de leche, gently warmed
  • 1 banana, sliced just before serving

Method
 

  1. Crush the cookies into fine crumbs. Mix them with the sugar and melted butter until evenly moistened
  2. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling
  3. Beat the softened cream cheese until smooth. Add the dulce de leche and vanilla, then mix until creamy
  4. In a separate bowl, whip the cold heavy cream with powdered sugar until soft to medium peaks form
  5. Gently fold the whipped cream into the dulce de leche mixture until smooth and fluffy
  6. Arrange the sliced bananas over the chilled cookie crust.
  7. Spread the mousse evenly over the banana layer and smooth the top
  8. Cover and refrigerate for at least 6 hours, preferably overnight
  9. Whip the remaining heavy cream with powdered sugar and vanilla until medium peaks form. Spread or pipe it over the chilled cake
  10. Gently warm the remaining dulce de leche until it is easy to drizzle. Let it cool slightly, then drizzle over the whipped cream
  11. Add fresh banana slices just before serving
  12. Carefully remove the springform pan. Slice with a sharp, warm knife and serve chilled
