Ingredients
  

Lemon Cheesecake Filling
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups cold heavy whipping cream
Blueberry Layer
  • 2 cup fresh blueberries
  • 1/3 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
Assembly
  • 18 to 20 full-sheet graham crackers
  • 1/2 cup fresh blueberries, for topping
  • 1 tablespoon finely grated lemon zest, for garnish

Method
 

  1. Add the blueberries, granulated sugar, lemon juice, cornstarch, and water to a medium saucepan. Cook over medium heat, stirring frequently, until the berries soften and the mixture thickens. Remove from the heat and cool completely
  2. Beat the softened cream cheese in a large bowl until smooth. Add the powdered sugar, lemon juice, lemon zest, and vanilla. Mix until creamy and well combined
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the lemon cheesecake mixture until smooth and fluffy.
  5. Arrange a layer of graham crackers across the bottom of a 9 x 13-inch baking dish, breaking crackers as needed to cover the surface
  6. Spread about one-third of the cheesecake filling over the crackers
  7. Spoon a portion of the cooled blueberry mixture over the cheesecake layer and spread gently.
  8. Repeat the graham cracker, cheesecake, and blueberry layers until the ingredients are used, finishing with a layer of cheesecake filling
  9. Top with fresh blueberries and lemon zest
  10. Cover and refrigerate for at least 6 hours, preferably overnight.
  11. Slice into squares and serve chilled.
