Ingredients
  

For the Coconut Macaroon Crust
  • 2 cups sweetened shredded coconut
  • 1 1/2 cups vanilla wafer crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
For the Lemon Cheesecake Filling
  • 16 ounces full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, cold
For the Coconut Topping
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Thin strips of fresh lemon zest, optional

Method
 

  1. Prepare the pan: Lightly grease a 9-inch springform pan and line the bottom with parchment paper if desired.
  2. Make the crust: Combine the vanilla wafer crumbs, shredded coconut, granulated sugar, and salt. Stir in the melted butter until the mixture resembles moist sand.
  3. Press the crust: Firmly press the mixture into the bottom of the springform pan. Refrigerate while preparing the filling.
  4. Beat the cream cheese: Beat softened cream cheese until completely smooth. Gradually add the powdered sugar and mix until creamy.
  5. Add lemon: Mix in the lemon zest, fresh lemon juice, and vanilla extract until evenly combined.
  6. Whip the cream: In a separate bowl, beat the cold heavy cream with the powdered sugar until stiff peaks form.
  7. Fold the filling: Gently fold the whipped cream into the cream cheese mixture in batches. Stop mixing as soon as the filling is smooth and fluffy.
  8. Fill the crust: Spread the lemon cheesecake filling evenly over the chilled crust. Smooth the top with a spatula
  9. Toast the coconut: Place the remaining shredded coconut in a dry skillet over medium-low heat. Stir frequently until lightly golden. Transfer to a plate and cool completely.
  10. Make the topping: Beat the cold heavy cream with powdered sugar and vanilla until stiff peaks form.
  11. Decorate: Top the cheesecake with whipped cream, cooled toasted coconut, and optional lemon zest.
  12. Chill: Cover and refrigerate for at least 6 hours, preferably overnight.
  13. Serve: Carefully remove the springform ring. Slice with a sharp knife warmed under hot water and wiped dry between cuts.
