No Bake Lemon Shortcake Icebox Cake

Ingredients
  

  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • Zest of 2 large lemons
  • 1 teaspoon vanilla extract
  • 2 cups cold heavy whipping cream
  • 1/3 cup powdered sugar
For the Shortcake Layers
  • 2 packages crisp ladyfinger cookies, about 7 ounces each
  • Optional fresh berries, for serving
  • Optional extra lemon zest, for garnish

Method
 

  1. Beat the softened cream cheese with 1/2 cup powdered sugar until completely smooth
  2. Add the fresh lemon juice, lemon zest, and vanilla extract. Beat until the mixture is creamy and evenly combined.
  3. In a separate chilled bowl, whip the heavy cream with 1/3 cup powdered sugar until firm peaks form. Be careful not to over-whip
  4. Gently fold the whipped cream into the lemon cream cheese mixture until smooth and fluffy
  5. Arrange one layer of ladyfinger cookies across the bottom of a 9 x 13-inch baking dish. Cut a few cookies if needed to fill larger gaps
  6. Spread half of the lemon cream filling evenly over the cookies.
  7. Add a second layer of ladyfingers, arranging them closely together.
  8. Spread the remaining lemon filling over the second cookie layer and smooth the surface.
  9. Cover the dish tightly and refrigerate for at least 6 hours. For the softest, most cake-like texture, chill overnight
  10. Before serving, garnish with fresh berries and a little finely grated lemon zest if desired
  11. Slice with a sharp knife and serve cold

  • Use crisp ladyfingers rather than soft sponge-style ladyfingers so they can gradually absorb moisture from the filling.
