No Bake Oreo Chocolate Mousse Pie

Ingredients
  

Oreo Crust
  • 24 Oreo cookies, including the cream filling
  • 5 tablespoons unsalted butter, melted
Chocolate Mousse Filling
  • 6 ounces semisweet chocolate, finely chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons water
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups cold heavy whipping cream
  • 1/4 cup powdered sugar
Whipped Cream Topping
  • 1/2 cup cold heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 4 to 6 Oreo cookies, crushed or roughly chopped
  • Chocolate shavings, optional

Method
 

  1. Crush the Oreo cookies into fine crumbs using a food processor or resealable bag and rolling pin
  2. Mix the crumbs with melted butter until evenly combined.
  3. Press the mixture firmly into a 9-inch pie dish, covering the bottom and slightly up the sides. Refrigerate while preparing the filling.
  4. Place the chopped chocolate, butter, and water in a microwave-safe bowl. Heat in short intervals, stirring between each one, until smooth.
  5. Stir in the vanilla and let the chocolate cool until slightly warm.
  6. Beat the cold heavy cream with powdered sugar until soft to medium peaks form
  7. Gently fold about one-third of the whipped cream into the cooled chocolate mixture
  8. Fold in the remaining whipped cream in two additions, using gentle movements to preserve the mousse's airy texture
  9. Spoon the chocolate mousse into the chilled Oreo crust and smooth the top
  10. Cover and refrigerate for at least 4 hours, preferably overnight.
  11. Before serving, whip the remaining heavy cream with powdered sugar and vanilla until firm peaks form
  12. Spread or pipe the whipped cream over the chilled pie
  13. Finish with crushed Oreos and chocolate shavings, if desired
  14. Slice with a sharp knife and serve cold.
