No Bake Pop Tart Ice Cream Pie

Ingredients
  

For the Crust
  • 24 chocolate sandwich cookies, finely crushed
  • 5 tablespoons unsalted butter, melted
For the Ice Cream Filling
  • 1 quart vanilla ice cream, slightly softened
  • 6 frosted strawberry Pop-Tarts, cut into small pieces
  • 1 cup strawberry pie filling or strawberry preserves
  • 1 teaspoon vanilla extract
For the Topping
  • 2 strawberry Pop-Tarts, cut into small pieces
  • 1/2 cup whipped cream
  • 2 tablespoons strawberry pie filling or preserves

Method
 

  1. Crush the sandwich cookies into fine crumbs. Mix them with the melted butter until evenly moistened.
  2. Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish
  3. Place the crust in the freezer while preparing the filling.
  4. Let the vanilla ice cream soften slightly. It should be easy to stir but should remain cold and thick.
  5. Stir the vanilla extract into the softened ice cream.
  6. Gently fold in the chopped strawberry Pop-Tarts.
  7. Spread half of the ice cream mixture over the chilled crust.
  8. Spoon half of the strawberry filling over the ice cream and gently swirl it with a knife.
  9. Spread the remaining ice cream mixture over the top.
  10. Add the remaining strawberry filling and create a few light swirls.
  11. Cover the pie tightly and freeze for at least 4 to 6 hours, or until completely firm.
  12. Let the frozen pie rest at room temperature for 5 to 10 minutes before slicing.
  13. Top with whipped cream, chopped Pop-Tarts, strawberry filling, or fresh strawberries just before serving.
  14. Slice with a sharp knife and serve immediately.
