Ingredients
  

  • 2 cup cold heavy whipping cream
  • 1 can 1sweetened condensed milk, 14 ounces
  • 1 cup yellow or vanilla cake mix, heat-treated and cooled
  • 1 teaspoon pure vanilla extract
  • 1/2 cup rainbow sprinkles
Edible Cookie Dough
  • 1/2 cup all-purpose flour, heat-treated and cooled
  • 1/4 cup unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon milk
  • 1/2 tablespoon pure vanilla extract
  • 1/4 cup mini chocolate chips
Topping
  • 2 to 3 tablespoon rainbow sprinkles
  • Extra mini chocolate chips, optional

Method
 

  1. Heat-treat the flour and cake mix separately at 350°F for about 5 minutes. Allow them to cool completely
  2. Beat the softened butter, brown sugar, and granulated sugar until creamy.
  3. Mix in the milk and vanilla, then add the cooled flour and stir until a soft dough forms
  4. Fold in the mini chocolate chips. Shape the dough into small bite-sized pieces and set aside.
  5. Whip the cold heavy cream in a large bowl until stiff peaks form
  6. In another bowl, combine the sweetened condensed milk, cooled cake mix, and vanilla
  7. Gently fold about one-third of the whipped cream into the condensed milk mixture
  8. Fold in the remaining whipped cream until smooth and airy
  9. Gently fold in the rainbow sprinkles.
  10. Layer half of the ice cream mixture in a freezer-safe container, followed by half of the cookie dough pieces
  11. Add the remaining ice cream mixture and cookie dough pieces. Top with extra sprinkles
  12. Cover tightly and freeze for at least 6 hours, preferably overnight
  13. Let the ice cream sit at room temperature for 5 to 10 minutes before scooping
