Quick Easy No Bake Lemon Cream Pie

Ingredients
  

For the Crust
  • 1 1/4 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
For the Lemon Cream Filling
  • 8 ounces cream cheese, softened
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
For the Topping
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Fresh lemon zest, for garnish
  • Thin lemon slices, optional

Method
 

  1. Combine the graham cracker crumbs, melted butter, and sugar in a bowl until evenly moistened.
  2. Press the mixture firmly into a 9-inch pie dish, covering the bottom and slightly up the sides. Refrigerate while preparing the filling.
  3. Beat the softened cream cheese until completely smooth.
  4. Gradually mix in the sweetened condensed milk until combined
  5. Add the fresh lemon juice, lemon zest, and vanilla. Mix until smooth
  6. In a separate bowl, whip 1 cup heavy cream with 2 tablespoons powdered sugar until medium-stiff peaks form
  7. Gently fold the whipped cream into the lemon mixture in several additions
  8. Spoon the filling into the chilled crust and smooth the top
  9. Cover and refrigerate for at least 4 hours, or preferably overnight
  10. Before serving, whip the remaining heavy cream with powdered sugar and vanilla. Spread or pipe it over the chilled pie
  11. Garnish with fresh lemon zest and optional lemon slices
  12. Slice with a sharp knife and serve cold
