Soft And Chewy Oreo Funfetti Cookies

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 15 Oreo cookies, roughly chopped
  • 1/2 cup rainbow jimmies sprinkles

Method
 

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar until creamy and well blended.
  3. Add the eggs one at a time, mixing well after each addition. Beat in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt
  5. Gradually add the dry ingredients to the butter mixture. Mix just until a soft cookie dough forms. Avoid overmixing.

  7. Refrigerate the shaped dough for at least 30 minutes. For thicker cookies with better texture, chilling for closer to 60 minutes is even better.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden while the centers still look soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

  • Use softened butter, not melted butter, for the best cookie texture.
  • Do not overbake. The centers should still look slightly soft when the cookies come out of the oven.
  • Jimmies are recommended because they generally hold their color well during baking.
  • You can use Golden Oreos, Birthday Cake Oreos, or another favorite variety.
  • For especially neat-looking cookies, press a few extra Oreo pieces and sprinkles onto the dough before baking.
  • Cookie dough can be prepared ahead and kept refrigerated before baking.
