Ingredients

For the Cupcakes
  • 1 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large egg whites, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup Irish cream liqueur
  • 1/2 cup buttermilk
  • 3 ounces semi-sweet or dark chocolate, melted and slightly cooled
For the Irish Cream Chocolate Filling
  • 4 ounces semi-sweet or dark chocolate, finely chopped
  • 1/3 cup heavy whipping cream
  • 2 tablespoons Irish cream liqueur
For the Chocolate Irish Cream Frosting
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup Irish cream liqueur
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons heavy cream, as needed

Method

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. Melt the chocolate for the cupcake batter and allow it to cool slightly.
  3. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In a separate bowl, beat the softened butter and sugar until light and fluffy.
  5. Add the vanilla and Irish cream, then mix until combined.
  6. Add the egg whites one at a time, mixing after each addition.
  7. Add half of the dry ingredients and half of the buttermilk. Mix gently. Add the remaining dry ingredients and buttermilk, mixing only until combined.
  8. Divide the batter between two bowls. Stir the melted chocolate into one portion
  9. Alternate spoonfuls of vanilla and chocolate batter in the cupcake liners, filling each about two-thirds full. Gently swirl the batters with a toothpick
  10. Bake for 15 to 18 minutes, or until the cupcakes spring back lightly and a toothpick comes out with a few moist crumbs
  11. Cool the cupcakes in the pan briefly, then transfer them to a wire rack and cool completely.
  12. For the filling, combine the chopped chocolate and warm heavy cream. Let the mixture sit briefly, then stir until smooth. Add the Irish cream and mix well
  13. Cut a small cavity from the center of each cooled cupcake and fill it with the Irish cream ganache
  14. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder.
  15. Add the Irish cream and vanilla. Beat until fluffy, adding heavy cream a little at a time until the frosting reaches a smooth, pipeable consistency
  16. Pipe the frosting onto the cupcakes and decorate with chocolate shavings or curls if desired

Notes

  • Use room-temperature ingredients for the smoothest cupcake batter.
  • Do not overmix after adding the flour.
  • Let the melted chocolate cool slightly before adding it to the batter.
  • Cool the cupcakes completely before filling or frosting.
  • Add the Irish cream to the frosting gradually so you can control its consistency.
  • For an alcohol-free version, substitute a non-alcoholic Irish cream flavored product.
  • Store finished cupcakes in an airtight container in the refrigerator for up to 4 days.
  • Let refrigerated cupcakes sit at room temperature for about 20 to 30 minutes before serving.
