Ingredients
  

Chocolate Cookie Crust
  • 24 chocolate sandwich cookies, finely crushed
  • 5 tablespoons unsalted butter, melted
Peanut Butter Cheesecake Filling
  • 16 ounces full-fat cream cheese, softened
  • 1 tablespoons creamy peanut butter
  • 1 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup cold heavy whipping cream
  • 10 Reese's Peanut Butter Cups, chopped
Topping
  • 4 to 6 Reese's Peanut Butter Cups, chopped
  • 1/2 tablespoons whipped cream, optional
  • 2 tablespoons melted peanut butter, optional
  • Chocolate cookie crumbs, optional

Method
 

  1. Crush the chocolate sandwich cookies into fine crumbs. Mix with melted butter until evenly moistened
  2. Press the cookie mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling
  3. Beat the softened cream cheese until smooth. Add peanut butter, powdered sugar, and vanilla. Mix until creamy and fully combined.
  4. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the peanut butter mixture until the filling is smooth and fluffy.
  6. Fold in the chopped Reese's Peanut Butter Cups, reserving some pieces for the topping.
  7. Spread the filling evenly over the chilled cookie crust. Smooth the top with a spatula.
  8. Decorate with the remaining chopped Reese's cups. Add whipped cream, cookie crumbs, or a light peanut butter drizzle if desired
  9. Cover and refrigerate for at least 6 hours, preferably overnight
  10. Remove the springform sides and slice with a sharp, warmed knife. Serve chilled
