It's not rice, and it's not fried, but close your eyes adn you'll never know! Good for you quinoa and lots of veggies laced with soy and sesame oil. We guarantee you'll make extra just for the leftovers!
Quinoa Fried Rice
1 cup cooked quinoa 2 tbls peanut oil 1/2 cup peas 1 medium carrot, diced 2 scallions, thinly sliced 1 clove garlic, minced 2 tbls soy sauce 1 egg, lightly beaten 1 tbls sesame oil
Heat the peanut oil in a skillet. Add the carrots and cook till soft, about 3 minutes. Then add the scallions, garlic and peas. Mix well. Add the quinoa and mix again. Push the mixture to one side of the pan and pour the lightly beaten egg into the other side. Turn the heat to low and scramble the egg. Once cooked, mix the egg into the quinoa. Turn off the heat and season with the soy sauce and sesame oil.
