This is a crowd favorite. Share it with friends or keep it all to yourself because this is not just another pasta dish. The addition of roasted vegetables is a nice addition to the typical sauce-tomato-cheese combo, and will make you feel better about eating two portions!


Quick Pasta Bake

6 oz penne pasta (or any other short dried pasta)

1 cup Pomi strained tomatoes, or canned tomatoes

2 cups roasted vegetables

12 oz mozzarella, shredded or diced

1/2 cup grated parmigiano cheese

Preheat oven to 350 degrees

Boil the pasta until al dente, then combine pasta and all other ingredients in an oven proof

casserole dish.

Bake until golden and bubbly, about 20 minutes.
