Smokey bacon is balanced iwth sweet onion and tender cauliflower - adding pasta spreads the flavor, and makes it a dish you'll want to make more of just to enjoy it the next day.

  

 

Pasta with Cauliflower & Bacon

serves 2

 

6 oz short, dried pasta

1/2 lb cauliflower florets

3 oz smoked bacon

1/2 medium to large onion

1 cup chicken stock

1/2 cup panko breadcrumbs

1/2 tsp smoked paprika

1/2 lemon

a few sprigs of fresh parsley

 

Set a large pot of water to boil. Cut the bacon into small dice and add to a hot 12 inch saute pan. While the bacon is cooking, diced the onion and add it to the bacon. Once the bacon is browned and the onion is soft, add the breadcrumbs, mix well. Add the paprika and transfer the mixture to a bowl.

 

Break up the cauliflower into small pieces and add it to the already hot saute pan. Add the chicken stock and bring to a simmer. While the cauliflower is cooking boil the pasta. Chop the parsley and squeeze about a tablespoon of lemon into the parsley. When the pasta is al dente (meaning it still has a little bite) add it to the cauliflower in the saute pan. Now mix in the bacon mixture, the parsley and the lemon juice.
