Only one pot to wash and just a few ingredients?  Yes, please.  This is a simple dish of chicken, potato, onion, carrot and a lot of garlic.


One Pot Chicken & Potatoes

4 skinless, bone-in chicken thighs

1 Yukon Gold potato, diced

1/2 onion, sliced

2 carrots, diced

8 whole garlic cloves

2 sprigs rosemary, cut into 1 inch pieces

olive oil, salt and pepper

Preheat oven to 400 degrees.


Heat 3 tbls olive oil in a 12 inch skillet. When hot, add chicken and sear, about 4 minutes on each side. Add onion, carrots, garlic and rosemary to pan. Season with salt and pepper. Place pan in oven and roast about 45 minutes until chicken is cooked through and vegetables are golden brown.
