Spinach & Feta Bread Pudding Recipe
8 slices country style white bread, cubed
5 oz fresh spinach
8 oz feta cheese, crumbled
2 cups skim milk
1 tbls Dijon mustard
1 lemon, zest and juice
8x8 square pyrex baking dish (or 9x11)
Preheat the oven to 400 degrees
In a large bowl, beat the eggs till frothy, then beat in the mustard and add the milk. Add the lemon zest and lemon juice. Mix in the cubed bread until the bread is soaked through.
Pour half the bread mixture into the baking dish. Top with the spinach and half the feta. Add the remaining bread mixture and top with the remaining feta. Bake 45 minutes or until golden and bubbly. Let the bread pudding cool before cutting.
