A fresh, healthy salad in under 15 minutes!



Quinoa Tabbouleh Recipe

1 cup cooked quinoa

1/2 cucumber, diced

1 medium tomato diced

1 scallion, sliced thin

2 tbls chopped parsley

1 tbls chopped mint

1/2 cup chopped feta cheese

2 tbls lemon juice


Place quinoa and water in a small saucepan and bring to a boil. Cover, reduce the heat to a simmer and cook until all the water is absorbed. Fluff with a fork.

Combine all ingredients in a bowl, season with salt and pepper.
